The 2021 Pandemonium Cabernet Sauvignon was aged for 12 months in French oak barrels and sports a dark purple core with a brickish rim in the glass. Black plums, blackberry puree, cassis, old leather, and just a hint of tar are present on the nose. Black licorice and sour cherry tones hit the palate while it finishes with crunch tannins and a bitter herb finish.

It’s aged for 12 months in French oak barrels. Dusty earth and crushed peppercorn notes dominate the nose, but the palate is all fruit - think blueberry jam, blackberry coulis, and sweet baking spices. There is a bitter herb and sweet tobacco note on the back palate that I love.

Very red fruit forward and herbaceous on the palate, alongside grippy tannins and perfect levels of bright acidity, complete the wine.
