The 2021 Pandemonium Cabernet Sauvignon was aged for 12 months in French oak barrels and sports a dark purple core with a brickish rim in the glass. Black plums, blackberry puree, cassis, old leather, and just a hint of tar are present on the nose. Black licorice and sour cherry tones hit the palate while it finishes with crunch tannins and a bitter herb finish.

In its first release, this blend of 50% Lagrein, 37% Zinfandel, and 23% Merlot is a concentrated, luscious wine fermented with skin contact for 14 days. Aged 12 months in French oak lends a creamy density while exuding aromas of violets, dark chocolate, and boysenberry. Even on the palate, the blue fruit is enhanced by violets and drenched in white chocolate.

It’s aged for 12 months in French oak barrels. Dusty earth and crushed peppercorn notes dominate the nose, but the palate is all fruit - think blueberry jam, blackberry coulis, and sweet baking spices. There is a bitter herb and sweet tobacco note on the back palate that I love.

Thanks to a 50-degree diurnal shift at this site, the long hangtime and lower yields result in an intense flavor profile for this 100% Zinfandel. Brushy notes of cranberry and blackberry merge with black pepper and tobacco leaf. Meaty, round tannins augment the experience. No havoc on the palate: instead, a balanced finish of licorice and leather with bright acidity.

Very red fruit forward and herbaceous on the palate, alongside grippy tannins and perfect levels of bright acidity, complete the wine.
